Only fully ripe grapes are harvested by hand, early in the morning.
On the first maps of Apulia and in medival lists of landownerships is our region called "Sarolo". The origin of this name is not known. To honor our old traditions and revive the name of our soil we call our traditional, autochtone wines "Sarolo".

Soil and Climate
Red soil by decomposition of limestone abounding in ferrac hydroxide.
The Valley d'Itria is located in the Murgia hills of South Puglia between the Adriatic and Ionian coasts. From September onwards the temperature varies from 25-30° C during the day and 5-8° C in the night. This climate enhances notably the aroma and the quality of our wines.
